I made batches & batches of this recipe over the years.

Until we tried Heather's. The nutmeg did me in. Especially if you use freshly grated nutmeg. So good.

When I first began making it, I followed it to the letter. Which is actually quite out of character for me. Then I began to mix things up a bit. I love granola with lots of nuts in it. Almonds, sunflower seeds, pumpkin seeds. I added lots of nuts and seeds to the recipe….. and I really hoped that after a few months my little kids would love it. But, they didn't. In fact they started to complain a little about eating it. *sigh* So I went back to the original and slowly added things, seeing how much nut/seed protein I could pack in without them turning their noses up. It turns out, they do love coconut flakes and sliced almonds. Not so much the seeds though….. so here is the updated version. Which we eat most mornings. Topped with kefir and a handful of frozen or fresh berries.

My New Favorite Granola 

this recipe makes just over a half gallon, I double it. always. it keeps well in tightly sealed jars.


6 cups of oats

2 cups of large coconut flakes

1.5 cups sliced almonds (or coarsely chopped)

1/3 cup flour (wheat is good, we use almond or oat flour in ours)

1/3 cup honey

1/3 cup maple syrup (grade b is best!)

1 tsp vanilla extract

1/2 tsp almond extract

1/3cup + 1 TBSP coconut oil (I always double this & use 3/4 cup in the doubled batch)

1/2 TBSP cinnamon

1/2 tsp nutmeg (freshly ground is amazing + totally worth the effort!!)

1/2 tsp sea salt


*preheat the oven to 300. mix the oats, coconut, nuts & flour in a large bowl. set aside. add the remaining ingredients to a small saucepan and warm over low heat until it is smooth and liquefied. drizzle half the liquid over the oats, mix well with a wooden spoon. drizzle the remaining half over the oats. mix well again. spread in a thin layer over a cookie sheet. this may require 2-3 cookie sheets depending on the sizes you have. (it takes awhile when you make a double batch, but it's well worth the effort!) bake for 40 minutes, stirring halfway through. the granola will be lightly golden brown. it will get crunchier as it cools!

*notes, I have added up to two additional cups of seeds/ to this recipe with delicious results. walnuts, sunflower seeds and pepitas (pumpkin seeds) are my favorite.

*I also love to add a cup of golden raisins or dried cherries. do this after the granola cools, otherwise they'll burn!

*if you want clusters, take about a third of the dry mix (oats, coconut, almonds) and process it in the food processor for a little bit. making a really chunky meal…. not so much that it's flour, just a little now. add that back into the bowl & stir well.

*let the granola cool completely, store it in good sealing glass jars. write good morning on it with a sharpie….. it'll make your people smile~ (and don't worry, the sharpie washes off)

  1. You are too sweet! Thank you 🙂 I promise this recipe will not disappoint! I puled some components of my old recipe into this one….. and if you miss the extra boost of flavor from the nut butter, you could totally add it to today’s granola recipe!


  2. This is my third class of hers…. I took last years Whole Food Kitchen + her 30 Day Vegan class and this year’s Whole Food Kitchen. Totally worth every penny invested. I printed up a binder of recipes & reference it weekly for menu planning. I *love* them. This time when class is down I am going to have everything printed up in a spiral bound book. It’s really that good!
